Ameztoi was started in 1880 and has been family owned and operated for five generations. This practicing organic winery is tucked away in northern Spain and focuses their winemaking on using indigenous grapes. The vineyard itself overlooks the Bay of Biscay, which produces warm sea breezes. This bubbly is made from old vines of the Hondarrabi Zuri varietal and is made using the classic champenoise method, including being aged on the lees for 6 years. With a refreshing acidity and tasting notes of lemon, pear, apple and a zesty finish, it pairs well with canapes or desserts, including pastries.
