The spirit is initially matured in American white oak ex-Bourbon casks, yielding soft vanilla and honey notes. A proportion of the spirit is then finessed in pinnacle Sherry casks, including 30-Year Old Matusalem Oloroso casks, exclusive to The Dalmore, to give the whisky a rich, nutty character.
