Pat and Joe Campbell selected the Elk Cove property for its shallow soils and steep, hilly terrain and named it for the herd of Roosevelt Elk that bedded down next to the trailer they occupied during the 70s. Adam Campbell is now in charge of their 6 vineyard sites. The grapes are picked by hand and very gently pressed, with minimal skin crushing which yields white Pinot Noir. Select Pinot Noir juice is then blended back in for color and texture. Youll find notes of strawberry blossom on the nose and plenty of strawberries, red cherries and lime zest in the mouth, with a round, juicy finish. Pair with a classic shrimp cocktail.
