Of the Lambrusco varieties, Lambrusco di Sorbara is often regarded as the best. It produces highly concentrated, fragrant wines, and the unique vine flowering process that occurs during growth reduces the quantity of grapes available but not the quality. Using the Ancestral Method, the winemakers aim for uniqueness and a retro handcrafted style. With a reflective ruby red color, this luscious sparkling wine is fruit-forward and floral with notes of breadcrumbs and hazelnuts. It is perfect when matched with dishes that feature the classic elements of the Emilia Romagna region, like their famous balsamic vinegar, Parmigiano Reggiano cheese, or aged prosciutto. The winemaker also recommends this wine with a creamy tortellini or Italian bread-and-cheese soup.
