He believes in making wines with a strong identity, with societal and environmental values, technical precision and personality, all the way from the vines to the bottle, and prefers using single vineyard sites. The Sauvignon Blanc for ‘Villa des Anges’ comes from Limoux, a cooler site within the warm, southerly Languedoc region. Juicy flavors of yellow and green apples, citrus and lemongrass and a crisp finish, this wine is easy to enjoy all on its own or with some goat cheese or an apple tart.
