Originally hailing from the Loire Valley, where it is known as Sauvignon Rose, this grape varietal is a mutation of Sauvignon Blanc with a very pale pink skin. Though it can have some similar qualities to Sauvignon Blanc, it tends to produce wines that are a bit more subtle. Grown in the cooler temperatures and limestone soils of Paicines, this wine has notes of apricot and white flowers as well as lemon blossom. It finishes with a subtle hint of salinity. Pairs perfectly with seared scallops in a white wine sauce or oysters on the half shell.
