This hand-harvested Spanish white originates from the Manchuela region in Spain. Parajes del Valle is a more recently established winery and they are certified in organic growing. Grown in soil composed of clay and limestone; the grapes are hand picked and then fermented with wild native yeasts for 15 days in concrete tanks until bottling. The Maceracion offers notes of orange citrus and candied fruits with a dry finish. Best paired with nuts or your favorite pork dish!
