Paul Gosset Au Fils du Temp Hiver 2020

Champagne Paul Gosset is a venerable grower-producer based in A, Champagne, with roots tracing back to the 16th century. Under Paul Gossets stewardship the estate now nurtures about 3.5 hectares of Pinot Noir vineyards across A, Mareuil-sur-A and Dizy, planting and farming with strong respect for biodiversity and natural soil health. Fermentations are spontaneous, sulphur is minimal and the wines are vegan-friendly, crafted to reflect pure terroir. A sits at the heart of the Marne Valley in Champagne, renowned for its chalky soils and south-facing slopes that favour Pinot Noir. Dizy lies just east of A and shares similar geology with steep slopes and deep chalk bedrock, imparting structure and minerality to the grapes.

The Au Fils du Temps Hiver 2020 is made from 100% Pinot Noir grown on steep slopes in Dizy. Around 60% of the cuve undergoes fermentation in oak fts, followed by extended ageing on the lees in bottle in the cellar before release. Expect a fine bubbles texture, aromas of baked brioche, wild strawberry, some spice and chalky minerality, with a crisp, savory finish. Ideal with smoked salmon, soft cheeses or seasonal game birds.
