After four years of searching, Pier Luigi Tolaini found what he was looking for in the Motebello and San Giovanni vinyards located in the prestigious Castelnuono Berardenga area in the southernmost section of Tuscany’s Chianti Classico region. Valdisanti is made from 50% Cabernet Sauvignon & 50% Cabernet Franc grown in the sandy, stony soils of the San Giovanni vinyard. Fermentation takes place entirely in French oak fermenters, and the wine is then aged in French oak barriques for 16 months, including 6 months on lees. The result is a youthful, full-bodied wine, plush on the palate with juicy dark berry & cassis flavors melded with vanilla & tobacco notes. The balance, intensity & fine tannins make for an age-worthy wine. Perfect accompaniment for a T-bone steak.
